I found this recipe in a Sonoma Diet book and adapted it to suit the ingredients I had in my pantry and fridge.
I am going to call it...
3 sun dried tomatoes diced (soaked in boiling water for 5 minutes first so they are soft)
2 cups salad greens
1/4 cup cannellini beans (white kidney beans) drained and rinsed
1T crumbled feta cheese (I really like the goat cheese feta cheese the best)
1 small can of tuna (packed in water, drained)
Layer the salad:
greens
tuna
beans
feta
tomatoes
Dressing:
2T red wine vinegar
1T finely chopped shallots
1.5t. dijon-style mustard
2T EVOO
kosher salt and finly gound black pepper
soad the shallots in the vinegar for about 5 minutes before adding the mustard. Wisk and stream in the EVOO. Season with S&P. Drizzle over salad.
I served up my delish salad with a whole wheat pita!
